Soup ingredients:

1 medium firm pumpkin. Avoid those grown especially for carving as they contain little flavour. Try: Kabocha Squash, Cinderella Pumpkin, Red Kuri Squash, Buttercup Squash, or my absolute favourite – the Potimarron pumpkin!

Splash olive oil

1 medium onion, diced

2 cloves garlic, minced

1 tsp dried sage (or 1 tbsp fresh, chopped)

1/2 tsp dried thyme

1/2 tsp salt (adjust to taste)

Freshly ground black pepper, to taste

3 cups vegetable broth
-
1/2 cup coconut milk or heavy cream (for richness)

Optional: pinch of nutmeg or cinnamon for a subtle warming finish
Method:
Before starting, cleanse your kitchen with intention. You may like to light a candle, diffuse cleansing essential oils like juniper or clary sage, and take a moment to centre yourself.

Blend: Use an immersion blender to purée the soup until smooth (or transfer carefully to a blender in batches). Return to the pot.
Finish with cream: Stir in coconut or fresh dairy cream, and warm gently without boiling. Taste and adjust seasoning as needed. Add a pinch of nutmeg or cinnamon you like.
